I created this breakfast pizza in an attempt to clear out my fridge. It made me feel extra productive! Plus I got to eat fried eggs. *happy sigh*
Mexican Breakfast Pizza
- 1 tablespoon sour cream
- 1 tablespoon salsa
- 1/4 cup shredded Mexican cheese blend
- 3-4 avocado slices
- 1 egg, fried or scrambled
- 1 tortilla
- freshly ground pepper
Set oven to broil. Mix equal parts sour cream and salsa in a small bowl. Spread the mixture on a warmed tortilla and top with cheese. Quickly broil for 1-2 minutes, watching closely to make sure nothing burns. Top with avocado slices and a fried (or scrambled) egg. Sprinkle with pepper and enjoy!
Extremely delicious…pictures are superb as always and i’m totally in love with this dish x
Thanks, Dimple! I love it, too! 🙂
[…] Patty […]
Woah, this looks incredible.
Thanks, Sonya! 🙂
Oh My! Yes please Patty! That looks and sounds so amazing!! I am definitely going to try this out! Wow, wow, wow! I love Mexican food, and I love eggs….wonderful, wonderful combination! “Liquid gold”….love that! Made just the way I like them! You are such a gifted photographer! I just love looking at your pics! And I am always happy to see Bailey! 🙂
Thanks so much, Lori! ♡ I’ll trade you a pizza for a cupcake! Bailey says hi, by the way. 😀
Sounds like a deal! 🙂 Hi Bailey! 🙂
Perfection! Delicious components and simple preparation. Looks like the perfect breakfast [or lunch, or dinner] to me 😉
Definitely lunch and dinner, too!
I could have one pizza right now. As always, beautiful photos. And Bailey is such a cutie!! ❤
Thanks, Jhuls! Happy Friday!
I would love this with scrambled eggs (I do not care for fried eggs) – I have everything on hand except an avocado 🙂
Oh scrambled eggs on top would be great!
Yum! I love pizza, and this is a great way to have pizza for breakfast! 🙂
Thanks, Nancy! 🙂
What a great idea! And I’m with you on the fried eggs 🙂 Looks so good.
Thanks, Jillian! I’d love to eat fried eggs every day!
We have got an interesting name for the dish(only the egg part of it) that is, “Bull’s Eye” 🙂
That’s a pretty interesting name! Happy Friday, Sreejith!
ooohhhh i can’t wait to try this!!!!
Please do, Audrey! I hope you enjoy!!
Not just for breakfast; I am going to try it for dinner. I am sure Audrey will say “This is a keeper.”
You’ll have to tell me how she likes it!
Italians usually have some kind of “strict rules” when it comes to making pizza…..But, goodness me! That look soooo good! I would be happy to have it even with just the avocado and the egg on top! Love it! Well done! 🙂
Thanks, Serena! Fried eggs make everything perfect!
it’s a nice idea! 🙂
Thanks, Serena! I wish cleaning out my fridge was always this fun! 🙂
My goodness, I want to lick the screen Patty! Waaauuw!!
I may or may not have licked the plate…teehee. 😉
That looks delicious! I never thought to mix my sour cream and salsa together — great idea! Yum!
Thanks, Neely! You can also mix salsa and ranch for a great salad dressing! Toss with greens, black beans, corn, tomatoes, and whatever else you’d like!
ooh — good idea! 🙂
Delicious, Patty, as always. So healthy and vibrant for a morning meal, too. I hear mimosas pair really well with Mexican breakfast pizza. I’ll bring some right over!
Hurry, Ngan! I’m waiting! 🙂
Yummy, what a fantastic idea!
Thanks, Melissa! I wish I had chorizo on hand!
Ooh, great addition!
Thanks, Melissa! 😀
Oh Patty! I’d like to be able to clean out the fridge exactly you did… Great job!
Thanks, Margherita! I bet your fridge cleaning would produce amazing creations!
Oh my Pats!,,, this is my kind of pizza ! No need to say that the pics are gorgeous as ever :))). Such a simple and warming recipe my dear friend :).
Thanks, Sonal! The second time I made it I had two fried eggs!
I don’t really like the word “porn” but I guess this would classify as “yolk porn” in some social media forums. What really sets this dish apart is the spread, which could be so versatile as you say. Finally, I like this because it could be “hand held.” I am kind of a heathen and like to put things in my mouth with my hands — burritos, burgers, satay, egg rolls, lettuce cups, so I was thinking I could just roll this up like a burrito or fold it like a pizza slice and go from there . . . . thank you for this recipe!
Yolk porn…teeheehee! Sue, I gave up on the fork after the photos and rolled it up and stuffed it in my mouth! Had to kind of keep my head tilted to catch the yolk, but it all worked!
Exactly!!!!! Now i know we are friends:)
Oh most definitely!!! 😛
Runny egg on pizza…looks so good! 🙂
Thank you! 😀
Hi Bailey! :3 And that’s what I call breakfast!
Bailey says hi back! 🙂
Did Bailey have one? 😉
This looks like a delish fridge clean-out! Please tell me I can have this for dinner too! 😀
Lunch and dinner! Breakfast for dinner is always a yes for me. And Bailey got some shredded cheese along the way!
Love the photography! It looks really good. I kinda feel like breakfast now. 🙂
I kinda feel like breakfast all the time! 🙂
Where did mine go? I want one!
Bailey ate it. Sorry. You snooze, you lose.
Oh ya. Oh sure. Ya betcha!
Patty, this looks sooooo delicious! It is perfect for a Friday night dinner, after a long work week! I really want to make this too! I love it because is is so versatile too! Hmmmm let’s see what’s in the fridge??
Anything goes, Julianna! I’d love mixed salad greens on it, too!
