I created this breakfast pizza in an attempt to clear out my fridge. It made me feel extra productive! Plus I got to eat fried eggs. *happy sigh*
Mexican Breakfast Pizza
Ingredients:
- 1 tablespoon sour cream
- 1 tablespoon salsa
- 1/4 cup shredded Mexican cheese blend
- 3-4 avocado slices
- 1 egg, fried or scrambled
- 1 tortilla
- freshly ground pepper
Directions:
Set oven to broil. Mix equal parts sour cream and salsa in a small bowl. Spread the mixture on a warmed tortilla and top with cheese. Quickly broil for 1-2 minutes, watching closely to make sure nothing burns. Top with avocado slices and a fried (or scrambled) egg. Sprinkle with pepper and enjoy!

It makes me happy.

Italians usually have some kind of “strict rules” when it comes to making pizza…..But, goodness me! That look soooo good! I would be happy to have it even with just the avocado and the egg on top! Love it! Well done! 🙂

I don’t really like the word “porn” but I guess this would classify as “yolk porn” in some social media forums. What really sets this dish apart is the spread, which could be so versatile as you say. Finally, I like this because it could be “hand held.” I am kind of a heathen and like to put things in my mouth with my hands — burritos, burgers, satay, egg rolls, lettuce cups, so I was thinking I could just roll this up like a burrito or fold it like a pizza slice and go from there . . . . thank you for this recipe!
Yolk porn…teeheehee! Sue, I gave up on the fork after the photos and rolled it up and stuffed it in my mouth! Had to kind of keep my head tilted to catch the yolk, but it all worked!
