Spicy Asian Chicken Wings

I made a batch of these wings for my parents before my trip to Portland. They watch Bailey, I make some wings for them in return. Everybody is happy!

Spicy Asian Chicken Wings

Ingredients:

  • 2 lbs. chicken wings (you can use this marinade for any cut of chicken you’d like)
  • 1 shallot, finely chopped
  • 2 cloves garlic, finely chopped
  • 1 tablespoon sesame seeds
  • 1 tablespoon red pepper flakes
  • 3-4 tablespoons soy sauce (depending on the salt-content of the brand you’re using)
  • 2 tablespoons honey
  • 1 tablespoon sesame oil
  • 1 tablespoon sugar
  • 1 teaspoon salt
  • 1/2 teaspoon pepper

**I realize that the addition of both soy sauce and salt as well as honey and sugar may seem redundant, but the flavor profiles of each are different, thus creating a greater overall flavor profile for the marinade. ๐Ÿ™‚

Directions:

Combine marinade ingredients in a small bowl. Taste to make sure there is a balance of savory and sweet since different soy sauces have varying sodium contents. Adjust the amount of soy/honey as necessary.

Transfer the chicken wings to a plastic ziploc bag. (I’ve found this is the best way to marinate chicken since you can seal out the air and easily flip the chicken around every few hours.)ย  Add the marinade and seal the bag, making sure to press out any excess air. Massage the chicken through the bag to make sure the marinade evenly coats the chicken. Marinate at least 12 hours, turning the bag at least once or twice during this time.

Turn the oven to broil. Position the oven rack at the second highest level. Remove the chicken from the marinade and place on a baking sheet. Place the chicken in the oven and check it every 5-8 minutes, turning and rearranging the chicken as needed. I find that the middle pieces always cook the fastest, so I rotate them around. Cook the chicken until even golden brown and slightly charred, between 20-25 minutes. If you chicken is browning too quickly, lower your oven rack to allow the chicken to cook thoroughly.

Remove chicken from oven and let rest 10 minutes before serving. Enjoy!

  1. I have tried this recipe and it is the only way to enjoy chicken wings. It is mouth watering just thinking about it.

    • Paul told me it’s Riley’s favorite chicken wing recipe now. But he uses the recipe I gave him with thick soy as an ingredient. I didn’t make that version since thick soy is not readily available in markets (yet). ๐Ÿ™‚

    • Yes, Bailey was being a good boy and didn’t try to steal any wings. He’s only naughty about food with his grandma and grandpa. True story. ๐Ÿ™‚ Don’t forget to taste and adjust the marinade if you make these, Bonnie! I’ve used different brands of soy and sometimes the difference can be up to a tablespoon or two of soy!

      • I switch between Green Mountain (common in Vietnamese households) and Haechandle (a Korean brand). The Green Mountain is definitely saltier, and Haechandle has a sweeter balance to it. When I use Green Mountain, I usually decrease by the soy by a tablespoon and kick up the honey to round out the flavors. ๐Ÿ™‚ Which brand(s) do you use at home?

      • Oh wow interesting, I don’t know either of those brands. Will have to check them out the next time I am at the market. I use low-sodium Kikkoman and also low-sodium Aloha Shoyu, a less common Hawaiian brand. Interested to taste how they are different! Thank you Patty!!

    • No chicken bones, or onions, or garlic! What happened to your wings? Why were they bad? Oh dear! And my parents love pup-sitting. Even if my dad pretends that it’s a lot of work and he’s put out by it. I’m onto him–I know they miss him after watching him for a few days! ๐Ÿ˜€

      • Expiration date said one thing, the smell said something else. Organic, good quality, just gone south too soon. I made lasagne instead (like on the airplane in the old days “chicken or lasagne”).

        Oh, the stories I could tell about pup sitting and parents and me…

      • What a shame about the wings. Lasagne isn’t a bad substitute, that’s for sure! I sorta miss airplane food. It was exciting to see what they were going to serve you each time. ๐Ÿ™‚

    • I’m going to try my hand at Pok Pok wings next, Ngan! But not until summer. Too much to do before then! I’m lucky I got my food queue going during spring break. That will keep me going until I have time again. ๐Ÿ™‚ Bailey is pretty cute. But sometimes I think he is cuter in pictures than in person. Don’t tell him I said that!! ๐Ÿ˜‰ He is just a very photogenic little fluffball. โค

    • Yes, the marinade is very versatile, Angie! You can use it on short ribs as well. Bailey is only sometimes good. It’s always a surprise when he is. ๐Ÿ˜‰
