Mexican Breakfast Pizza

I created this breakfast pizza in an attempt to clear out my fridge. It made me feel extra productive! Plus I got to eat fried eggs. *happy sigh*

Mexican Breakfast Pizza

Ingredients:

  • 1 tablespoon sour cream
  • 1 tablespoon salsa
  • 1/4 cup shredded Mexican cheese blend
  • 3-4 avocado slices
  • 1 egg, fried or scrambled
  • 1 tortilla
  • freshly ground pepper

Directions:

Set oven to broil. Mix equal parts sour cream and salsa in a small bowl. Spread the mixture on a warmed tortilla and top with cheese. Quickly broil for 1-2 minutes, watching closely to make sure nothing burns. Top with avocado slices and a fried (or scrambled) egg. Sprinkle with pepper and enjoy!

  3. Italians usually have some kind of “strict rules” when it comes to making pizza…..But, goodness me! That look soooo good! I would be happy to have it even with just the avocado and the egg on top! Love it! Well done! 🙂

  5. I don’t really like the word “porn” but I guess this would classify as “yolk porn” in some social media forums. What really sets this dish apart is the spread, which could be so versatile as you say. Finally, I like this because it could be “hand held.” I am kind of a heathen and like to put things in my mouth with my hands — burritos, burgers, satay, egg rolls, lettuce cups, so I was thinking I could just roll this up like a burrito or fold it like a pizza slice and go from there . . . . thank you for this recipe!
